TRISTAN ARTISAN CHOCOLATIER

In 1998, Tristan Carbonatto opened this charming little chocolate boutique in a former grocery store with the help of his family and friends and the support of the villagers. Tristan Artisan Chocolatier is a must see. Not only because the village is absolutly charming and the view is beautiful, but, of course, because these chocolates are probably the best in the whole region.

THEIR LOCAL TOUCH

Tristan only selects and works with premium products and creates a wide range of chocolates in the pure Swiss tradition. Each chocolate is handmade and made in Bougy-Villars. He offers some varieties made with local and seasonal products. Today, the chocolate boutique is a success and when the orders are at their peak, the ladies of the village give a hand to wrap chocolates. The chocolate boutique has given new life to the village.

INTERVIEW WITH TRISTAN CARBONATTO, CHOCOLATE MAKER AND OWNER OF TRISTAN ARTISAN CHOCOLATIER

local-collection.com: Could please tell us how you started your business and why you ended up in Bougy-Villars?

Tristan Carbonatto: I have lived in this charming village for 6 years. Because I was part of the voluntary firemen for the village and am an outgoing person, I created great connections with many inhabitants. One day the owner of this building offered for me to take it. At the time, I was working for a famous Chef in the region but I was also keen to start my own business. So I decided to take on this great opportunity.


I had almost no money at that time. With the help of my family and friends we renovated the space that had no electricity and no hot water. We also worked on the joinery and the painting. The shop opened in 1998. I started with the help of my family and then some friends joined the team. We also get some help during Christmas and Easter from the ladies of the Village. They'd give a hand with the packaging. Some of them didn’t know each other before, but now they meet every week for various activities.

This village gives me the opportunity to fully live my passion without being overwhelmed by quantities. I feel quiet here and I have all what I need to work on new creations and to produce unique chocolates.

LC: Where does your passion for chocolate come from?

TC: Passion for good food comes from my family. When I was a kid, I would watch my parents and my grand parents preparing huge family diners. Everything was homemade and prepared with love. Throughout my career I always kept this passion for tasty homemade products. I started my experience as a cook, but then I decided to move to confectionery. Little by little I became attracted by chocolate and the various possibilities available with this product.

In 1998, we offered approximately 10 different types of chocolate in my shop. Today we offer more than a hundred and we continue to create new ones with the help of my friends, customers and other artisans.

LC: What are your criteria when you select your raw materials?

TC: My first priority is the taste and I am always striving for the best. For instance, I personally select pistachio nuts in Sicily, hazelnuts in Piedmont and Almonds in Spain. My regular customers who have become friends help me discover new raw materials that they have brought back from their various travels. I discover new products from all over the world and then try to integrate them in my chocolates.

I also work with local products. One of my neighbors and friend who is a wine grower supplies me with raisinée, a typical Swiss grape specialty, which gives this special flavor to some of my chocolate truffles.

LC: What memories would you like to leave to your customers with?

TC: I would like to share my passion for good products with them. I would like to show them that we work with our heart: everything is homemade and handmade here. We are always looking for the best and we value quality over quantity. I hope that people feel it when they taste our chocolates. Each specialty needs a particular attention and every chocolate is produced in Bougy-Villars. I am a passionate, I love people and I love sharing my passion.
